Company’s History
In fact, the company was established by Aaron Kennedy, a former marketing executive at Pepsi, who was eating pasta and came to a conclusion that there were not enough restaurants that served noodle dishes. He, together with Joe Serafin, started working on developing recipes in his mother’s kitchen in 1994.
After using his savings and attracting investments, Kennedy opened the first Noodles & Company restaurant in Denver, Colorado in 1995. The second restaurant was opened in Madison, Wisconsin, just 6 months later.
At first, the company almost went bankrupt, after local journalists criticized the restaurant chain in their reviews. So, the founders went to Chicago to visit other noodle restaurants in order to see how they can refine the operations of their own establishment. Eventually, they compiled a list of 15 things to change and, after implementing them, the restaurant changed dramatically.
During the end of the 1990s, the company saw a period of rapid growth. By 2002, there were 37 locations of this company – this number grew to 142 by 2007. Today, there are 410 Noodles & Company restaurants in 29 U.S. states. In fact, more than 7,000 employees work for the company.
